Quailfied or fully trained for full time position
3 years bread making experience
Ability to make artisan breads including soughdough and rye breads
Good dough making skills and deck oven skills
Able to expertly mould and shape doughs by hand

A little bit more about us ….we are a wholesale bakery specialising in traditional European breads. We do produce large amounts of breads (for an artisan bakery) on a daily basis but very little is automated. The process is largely manual - cutting and shaping doughs by hand. We use slow ferment and double proofing methods. With most of the sourdough and ciabatta loaves the doughs are quickly hand-shaped and our experienced oven bakers finish shaping the bread as it goes to the oven. All products are hand finished. We have approximately 18 staff, and the bakery operates 7 days a week (6 days in the quieter season). Shifts begin around 1pm and others start at 5pm, the work goes into the night, the bread gets packed and delivered during the early morning so cafes/restaurants have fresh bread ready for the days’ trading. Our skilled bakers have the ability to lead a shift but it is very much hands on. Some have definite strengths in dough making, speed and expertise in shaping and moulding and others in oven skills (using a deck oven), but all have the ability to interchange.
